Yellow tea is produced in very small quantities as the production method is very complicated.
This hwang cha (yellow tea) tea comes from a valley in Hadong, where tea has been produced since the 9th century.
This yellow tea is in a class of its own, as the presence of rich animal and plant life in the plantation and the gentle processing of the tea has resulted in a tea with rare and deep notes. The tea is briefly wrapped in cotton cloths that encourage a process where the tea also develops fine flavour notes.
Very small quantities of this type of tea are produced, so if you have an interest in tasting tea produced in the most perfect circumstances, you should try this tea.

Picking:

This tea is a spring tea and was picked in May 2023.

Plantation and tea producer:

The tea plantation is called Goyeonsanbang and has been family-run since 2000. It produces green and yellow tea, all hand-picked and hand-produced. The tea bushes are cultivated according to natural farming principle, where biodiversity is maintained.

The family is also known for crafting wooden tools.

Brewing:

This hand-picked yellow tea can make up to 8-10 brews in one pot. You should therefore make small amounts, but repeated brews.

The tea is best brewed in a small teapot or gaiwan.

Use 1 tbsp. tea (4-5 grams) for about 350 ml of water.

Temperature 85 - 95 ºC,

Infusion time for 1st brew approx. 1-1.5 min.

  1. Brew for approx. 45 seconds. - 3rd brew 1- 2 min.
