Tieguanyin - the Iron Goddess of Mercy - is one of China's most famous Oolong teas.
The lightly roasted version is the most traditional and surprises with a beautiful floral fragrance with notes of orchid and narcissus. The dried leaves are rolled into emerald balls that open up in the teacup to reveal a sweet aroma and a beautiful green and shiny colour. The roasted notes appear in the aftertaste as a gentle breeze that leaves a complex flavour and creates a sense of anticipation for the next brews and the new sensory journey that will come with them.

Brewing instructions:
Gong Fu style brewing instructions for a gaiwan or small teapot: 4 grams - 100 ml.
Rinse: before starting the infusion, rinse the leaves with a very fast washing in order to let them rehydrate and release a more intense brew. Gently cover the leaves with boiling water and pour it after a few seconds.
First brew - 15 seconds / second and following brews - increase brewing time by 5 seconds at every other brew / 95-100° C
