Matcha tea - buy the ultimate green tea
Matcha is Japanese green tea in powder form and is made from the freshest and finest tea leaves from the first harvest of the year. The tea leaves are only picked once a year in May.

Up to 20 days before harvesting, the tea bushes are covered with bamboo mats so that the leaves get as little sunlight as possible and develop a high chlorophyll content. This gives the tea its characteristic green colour and sweet taste.

The "skeleton" of the leaf is separated and the fine leaf tissue is ground into a fine powder, so unlike regular tea, the whole leaf is consumed.
Tea production with high demands and precision
The production of matcha tea is a highly complex process that requires precision and labour-intensive workflows. The tea leaves grow in the shade and when picked, they must be refrigerated within the first 20 minutes to preserve freshness and vitality. The fine leaf tissue is ground in a stone mill that can only produce 20 grams of matcha tea per hour. An increased pace will create heat in the stones, which will affect the freshness and flavour of the leaves.

As soon as the tea is finished grinding, it is placed in airtight tins and stored in a cool place. Due to the high demands on both quality and production, only a limited amount of genuine matcha is produced annually. Unfortunately, there is a lot of counterfeit matcha on the market, which is more like powdered green tea, but has not gone through the many steps required to develop matcha tea with the round soft taste and intense green colour.

Genuine Matcha tea powder is only produced in Japan, and the colour reveals if the tea has been processed properly. The colour should be an almost luminescent green with a natural fruit aroma. It has been an integral part of meditation in Japanese temples for centuries.
