Sideritis is the Greek name for this plant, which is quite common in the Mediterranean and Adriatic regions, where it has been popular since ancient times. Greek Mountain Tea has a spicy and slightly sweet flavour and can be enjoyed hot or cold. Add a little honey and lemon if desired.

Brew with about 7 cm of the flower plus some leaves and stem for 400-500cl of water.
The tea is poured with hot water, about 90° and steeped for about 4-5 minutes, or longer if a stronger flavour is desired.
The best brew is achieved if the herbs float freely, as this releases the fine flavour.
