Description

Ceylon highlangs is a highland tea that is clear and lively in colour with a typical hint of Highland freshness. Ceylon tea originates from Sri Lanka, but it has always been known as Ceylon Tea. Coffee was the main crop in Sri Lanka until the 1860s, when a mould destroyed most coffee plants. Plantation owners had to switch to other crops. This laid the foundation for one of the world's largest tea-producing countries.

Sri Lanka's finest teas come from bushes that grow at an altitude of over 1200 metres. The bushes grow more slowly in the cool hazy climate and are difficult to harvest because they grow on steep slopes. Ceylon tea is clear and vibrant in colour with a wonderfully delicate flavour.

Preparation

Ceylon Highlands is brewed in a preheated jug.

Do not boil the water for a long time, as you boil the oxygen out of the water.

Use 1 tsp. tea per cup.

Pour 95 degrees hot water over the leaves.

Pull time: 3 - 4 minutes.

As the tea leaves give best results by floating freely, you can use a spacious strainer in the preheated teapot or pour the tea into a preheated teapot.

Tips & Tricks

If you only brew one cup/glass at a time, you can use a kopsi or "fill-your-own" tea tray, where the leaves can float freely and release the fine aroma. When using a kopsi or. "you can also brew on the leaves again.
