Long Jing tea or Dragons Well is one of the world's most famous teas. The tea originates from the Chinese province of Zhejiang, which is known for producing some of the best green tea in China. The tea has a fresh aroma and a beautiful clear green-yellow colour in the cup. The flavour is fresh and clean with hints of chestnut and hazelnut. Can be enjoyed during the day and as an evening tea.

Description

Preparation of Organic Green Tea Long Jing

  • Organic Green Tea Long Jing Long Jing is brewed in a small preheated pot
  • Do not boil the water for a long time, as you boil the oxygen out of the water.
  • Use 1 tsp. tea per cup.
  • Pour 80 degree water over the leaves.
  • Pull time: 3 - 4 minutes.

Tips & Tricks

If you only brew one cup/glass at a time, you can use a kopsi or "fill-your-own" tea tray, where the leaves can float freely and release the fine aroma. When using a kopsi or. "you can also brew on the leaves again.

By small pot we mean a Japanese tokoname teapot with an internal strainer. The advantage of the small pot is that you brew 1-2 cups at a time and then add more tempered water when you're ready for the next cup. This allows you to utilise the potential of the leaves by brewing several times, and you get the experience of a fresh cup of tea.

The story

As with other famous teas, there are legends associated with the tea. The story of Long Jing tea is told that a Chinese monk witnessed a dragon dwelling in a spring near the city of Hangzhou. The monk prayed that the dragon from the spring would save the poor peasants from dangerous drought. All of a sudden, rain clouds gathered and an ancient temple was built at the spring - Dragon's Well Monastery and the tea was named after the legend.

The tea leaves for this tea are harvested during a limited period from March to April. The tea leaves are dried/roasted in a hot pan. It requires great craftsmanship to repeatedly press the tea leaves against the sides of the pan to achieve the characteristic flat leaf structure. The tea has a fresh aroma, a beautiful clear green-yellow colour in the cup. The flavour is rounded with hints of chestnut. The aftertaste is refreshing and clean.
