Hokkyokusei is a Sencha tea and it consists of five cultivars.
The blend is made especially for Sing Tehus by Japanese tea master Yuta Hiraoka-san.
Hiraoka-san visited Denmark in January 2024 and brought a number of tea samples from cultivars well suited to Danish waters. After an in-depth tea tasting in collaboration with the team at Sing Tehus, the result was Hokkyokusei, a blend of cultivars that provide depth (umami) and a fresh and light tea with a hint of floral flavour.
The tea consists of the following cultivars:
3 different flavours of Sencha Yabukita, 1 x Fukamushi Sencha Okumidori and 1 x Fukamushi Sencha Yabukita.

The name Hokkyokusei means North Star, also called Polaris.
Yuta Hiraoka-san has worked in the family business Tamakawa Tea since he was young, where he had a special interest in tea tasting and tea blending.
Through dedication and hard work, in September 2023 he became one of the youngest tea masters to achieve the highest rank (10th dan) at the 70th National Tea Examination Skills Competition.

Description

Hokkyokusei is brewed in a small preheated pot. The water should not be boiling for a long time as this will boil the oxygen out of the water.

Prepare in a 450 ml Hario glass jug:
4 g / 2-3 minutes / 70-80°C
The leaves can be used 2 - 3 times.

Prepare in a 200-250 ml Japanese Houhin porcelain pot:
6-8 g / 70-80°C

Pull time:
1st brew: 45 seconds
2nd brew: 10 seconds
3rd brew: 60 seconds
