Pu Erh tea is a category of its own as this tea has undergone a fermentation process.

It originates from southern China, specifically Yunnan. The production of Pu Erh differs from green and black tea production as the leaves are fermented with water over a period of 40 - 50 days. Finally, the fermentation is stopped by drying in 150 degree hot air.

With its distinctive forest floor flavour and reddish-brown colour, Pu Erh tea is an exquisite experience.

Pu Erh can be prepared Gong Fu Cha style, which is a Chinese method that uses a very small teapot, but brews the tea 6-10 times or more, depending on the quality of the tea.

Use 1 tsp. tea per cup.

Pour some boiling water, around 95 degrees, on the tea leaves to rinse for a few seconds and release the flavours.

This water is discarded.

Pour another round of boiling water over the leaves and let them steep for 4-5 minutes.

Pour the finished tea into a preheated teapot.

As the tea leaves give best results by floating freely, you can use a spacious strainer in the preheated teapot or pour the tea into a preheated teapot.
