Pan yong tea is grown at an altitude of 1200 metres on hillsides in Fujian province in China. Tea has been grown here for 1700 years as the weather conditions are optimal for tea cultivation, with moist soil rich in sunshine hours and haze. However, the impassable terrain has posed some challenges over the years, which is why monkeys have been used to help with the picking, hence the name. Pan yong, however, is a relatively new variety that is picked in the spring.
It consists of light coloured shoots and leaves, which contributes to the golden flavour, with notes of honey in the aftertaste.

Preparation

Pan yong is brewed in a preheated pot.

Do not boil the water for a long time, as you boil the oxygen out of the water.

Use 1 tsp. tea per cup.

Pour 95 degrees hot water over the leaves.

Pull time: 5-6 minutes.

As the tea leaves give the best results by flowing freely, you can use a spacious strainer in the preheated teapot or pour Pan Yong tea into a preheated teapot.

Tips.

If you only brew one cup/glass at a time, you can use a kopsi or "fill-your-own" tea tray, where the leaves can float freely and release the fine aroma. When using a kopsi el. "fill-your-own" tea trays you can also brew on the leaves again.
