Description
Assam is located in the north-eastern corner of India, where the mighty river Brahmaputra flows. Assam is known for producing the famous 'tippy teas', which refers to a black tea with golden shoots and leaves. The Assam Valley is located about 200 kilometres east of Darjeeling, where it borders China, Burma and Bangladesh. Unlike the mountainous regions, the soil in the valley is rich and moist. Tea plants in Assam grow quickly and gain tremendous vigour. During the monsoon - from April to September - Assam is transformed into the world's largest greenhouse, producing almost a third of India's total tea production.
Preparation
Assam Leaf Blend is brewed in a preheated pot.
Do not boil the water for a long time, as you boil the oxygen out of the water.
Use 1 tsp. tea per cup.
Pour 95 degrees hot water over the leaves.
Pull time: 3 - 4 minutes.
As the tea leaves give best results by floating freely, you can use a spacious strainer in the preheated teapot or pour the tea into a preheated teapot.
Tips & Tricks
If you only brew one cup/glass at a time, you can use a kopsi or "fill-your-own" tea tray, where the leaves can float freely and release the fine aroma. When using a kopsi el. "fill-your-own" tea trays you can also brew on the leaves again.
