Fukamushi is a category and translates to "long steamed".

This means that this tea is steamed 2-3 times longer than a regular sencha, for example, which produces a more rounded flavour.

Kabusecha is a tea that has been growing in shade for about a week before picking.

This gives the tea a sweeter and more nuanced flavour. Fukamushi Kabusecha is therefore a "long steamed shade tea".

Japanese green tea can be enjoyed cold as well as hot, as these teas have a mild and fresh flavour. You can also brew the cold tea in cold water, but the leaves just need to steep for longer.

This tea is from our producer Hoshino Seichaen in Yame, Fukuoka, Japan.

Description

Fukamushi Kabusecha is best brewed in a pre-heated small teapot so that you can pour water back onto the leaves and make fresh extracts. Fukamushi Kabusecha is served in a small cup.

Use 1 tsp. (2-3 grams) of tea per cup and pour over the water when it has cooled slightly (75-80 degrees).

Let the tea steep for 1 minute the first time. For the second brew, steep for ½ min and the third brew for about 2 minutes. When serving, pour alternately between the cups to mix the contents. The tea leaves can be reused two to three times.
