This tea tasting focuses on the use of tea in cooking. Tea can contribute on many levels in cooking, as a delicate ingredient and as an aroma and flavouring. In Asia, tea is used in both sweet and savoury dishes. We want to introduce you to very high quality teas, including a tea where you eat the soft delicate leaves after brewing.  

We also discuss how to minimise waste of nutrient-rich tea leaves, which can be useful in many applications, including as plant fertiliser. We serve three dishes where tea is included in the recipe. Tea will of course be served with the food.  

Examples of dishes:  

  • Salad with Japanese green tea leaves. 
  • Soba noodles in dashi topped with roasted tea. 
  • Matcha ice cream.
