Translated “An Ji Bai Cha”, means “white tea from Anji (a province in East China)” – but it’s actually a green tea. The name is due to the leaves appearing almost white before being picked. They come from trees that were thought only to have existed in legends, but someone found a few specimens of the tree in the 1980s. The leaves are very long, slender and needle-shaped, and in the cup appear light green, like the tree from which it came.

An Ji Bai Cha has the essential taste of “high mountain” teas: its aroma suggests fresh grass, asparagus, beans, orchid and honey. It tastes fresh and exquisite with a long vegetal aftertaste with notes of flowers. Mild and well balanced.

Preparation

An Ji Bai Cha is brewed in a small preheated teapot or Gaiwan cup (cup with lid)

  • Serve 1 tsp. of tea per cup.
  • Add water at 80ºC to the dry tea leaves
  • Brewing time 1-2 minutes
  • The leaves can be used 2-3 times
