Kabusecha is a tea that has grown in shade for approximately one week before picking. This process produces a juicier leaf with a higher content of chlorophyll making the tea taste sweeter and nuanced. Also present in increased quantity due to the shade growing technique is L-theanine, an amino acid that might help with mental focus and better sleep quality.

Japanese green tea can be enjoyed cold, as well as warm, as these teas have a mild and fresh taste. You can also brew the cold tea in cold water, but the leaves just have to brew for a long time. Recommend to brew in a glass jug and leave in the fridge over-night.

Kabusecha is best brewed in a preheated small tea pot, so that you can pour water on the leaves again and make fresh extracts.

  • Use 1 tbsp. (about 8 grams) tea for 200-250 ml of water.
  • Water temperature: 70ºC.
  • First brew: 45 seconds.
  • Second brew: 5-10 seconds.
  • Third brew: approx. 1 minute.

Use soft water if possible to achieve the best flavour brewing this tea, it is very sensitive to hard water. You can pour water into filter jug before pouring into the kettle before boiling.
