Fukamushi Kabusecha (shade-grown and long-steamed))


Fukamushi is a type of green tea and can be translated as “long-term steamed”.

This means that this tea is steamed 2-3 times longer than a regular sencha, which produces a deeper flavor.

Kabusecha is a tea that has grown in shade for approximately one week before picking.

This causes the tea to have a sweeter and more nuanced taste. Fukamushi Kabusecha is thus a “long-term vaporized shadow tea”.

Japanese green tea can be enjoyed cold, as well as warm, as these teas have a mild and fresh taste. You can also brew the cold tea in cold water, but the leaves just have to brew for a long time.

This tea is from our producer Hoshino Seicha in Yame, Fukuoka, Japan.

Fukamushi Kabusecha is best brewed in a preheated small tea pot, so that you can pour water on the leaves again and make fresh extracts.

Use 1 tbsp. (about 8 grams) tea for 200-250 ml of water.

  • Water temperature: 70ºC.
  • First brew: 45 seconds.
  • Second brew: 5-10 seconds.
  • Third brew: approx. 1 minute.

Use soft water if possible to achieve the best flavour brewing this tea, it is very sensitive to hard water. You can pour water into filter jug before pouring into the kettle before boiling.
