Making matcha tea is a very difficult process that requires precision, including shade-growing the tea and the right picking time. In fact, there are only a few producers in Japan that have the facilities and know-how to grow and produce matcha tea with the desired fullness, sweetness and umami.
Matcha Yamabuki (100g) is produced by Mr Yamaguchi from Hoshino Seichaen. He is a 4th generation tea master and has 10 dan, which is the highest level for a tea master.
Another important detail when enjoying matcha tea is the airy consistency that is created when the tea is whisked with a bamboo whisk, in Japanese a chase. Simply rinse the whisk after use and store it on the ceramic holder, a naoshi. The ceramic holder is an important detail as it helps the whisk to keep its shape and therefore has a long lifespan.
